We call them recovery cookies because they’ll bring a smile to your face no matter what happens this summer. We love cookies and they always brighten a cloudy day. Did you get Covid like we did? That’s right; it’s still with us. I made these cookies after feeling pretty lousy for a few weeks, and yes, the recipe worked to cheer me right up. These sugar cookies are my recovery from chocolate chip making during the Pandemic

As a people pleaser, I have have been making the same chocolate chip cookies week after week for almost two years during the pandemic. I know how to make hundreds of different cookies, but my beloved wanted just the chocolate chips. Even worse, I felt crazed because I like my cookies with a crunch, and he likes his soft and melty. I made them his way until I cracked, and you know how that is. Resentments soared, and I just had to make my own cookies. These are my recovery sugar cookies that broke the habit and pleased us both.

Recovery Sugar Cookies

Ingredients:

  • 1 cup butter softened
  • 1 1/4 cup less processed sugar (like Dominos Golden Sugar, or Florida raw sugar crystals. white sugar has no taste)
  • 1 extra large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 2 ½ cups flour
  • 1 teaspoon vanilla
  • ½ teaspoon almond extract (or another flavor, optional)

Sparkling crystals, chocolate chunks or colored sugar optional to add before baking.

Directions:

Put very soft butter into a large mixing bowl and blend with mixer on medium until smooth. Slowly add sugar and mix on low until the sugar and butter are fluffy. Next add the egg and mix until smooth.

Combine baking soda, baking powder, salt, and flour, add slowly and mix until smooth. Add flavoring(s) at the end.

Here are two techniques for baking recovery cookies

  1. Easy way. You can roll into a log, slice into 1/4 in thick rounds, and sprinkle sugars and maybe add some chocolate chips or chunks on top. Arrange on parchment paper or waxed paper and bake in a 375 oven for 7-8 minutes. Let cool and you’re done.
  2. Longer way. you can let this dough chill in the refrigerator for 2-3 hours. Then roll out the dough and cut into holiday shapes. Arrange the cookies as above and bake at 375 degrees for 7-8 minutes, and then spend hours decorating them.
